Top 5 Vegetarian Breakfast Ideas

We all know that a new year is the perfect time to try new things! One of my goals for 2018 is to stop eating meat completely. So with that, I will have to learn all new recipes.
I came across some vegetarian breakfast/snack recipes that are super delicious! Plus, they are sooo easy to make. Which is perfect for lazy girls like me… 😅

1. Peanut Butter & fruit wraps-
2 whole grain tortillas
1 tablespoon Peanut Butter per wrap
1 tablespoon Vanilla Greek Yogurt per wrap
Handful of dark chocolate granola
1/2 banana per wrap
3 small strawberries per wrap

2. Southwest Avocado Toast-
2 pieces of bread, toasted
1 avocado peeled & seeded
2 eggs, scrambled
Salsa

3. Cinnamon Roll Smoothie– 
1 cup Vanilla Almond Milk unsweetened
1/2 cup Vanilla Greek Yogurt
1 frozen banana
1/4 cup oats
1 tablespoon brown sugar
1/4 teaspoon Cinnamon

4. Veggie Breakfast Burrito-
2 whole grain tortillas
2 eggs, scrambled
1 avocado peeled & seeded
1/2 cup black beans
1/2 red onion
1/2 cup salsa
1 tablespoon salt & pepper

5. Coconut Milk Oatmeal-
1/2 cup oats
3/4 cup coconut milk
honey or sweetener to taste
add fruit
add coconut yogurt for creamier texture

 

I haven’t been on this journey long, but with recipes like this it won’t be hard at all! Thank God for Pinterest & my sister for these ideas or I would be sooo lost 😂 What are your all’s favorite vegetarian breakfasts? Let us know!
